Spicy Chinese Green Beans
Recipe modified from Dinner
Then Dessert.
Was a bit too spicy, but I
added too much crushed red pepper. Also used a lot more of cuisinart-ed
garlic than was called for, and also added ginger because had a lot leftover from the pork buns. Maybe a bit much, but it was ok. Also, Eric likes them crunchy, so I
don't cook that long. Forgot the green onions, but oh well, maybe next time.
Ingredients:
-avocado oil
-1 lb green beans, trimmed
-2
tsp chili garlic paste
-2 green onions thinly
sliced - white parts only (didn't use)
-1 Tbsp garlic -ginger
-2 Tbsp soy sauce
-1 Tbsp rice vinegar
-1 tsp sugar (Used honey
instead)
-1/4 cup water
-1/2 tsp crushed red pepper
flakes
Directions:
1. Add garlic, ginger, onions,
chili-garlic paste, oil to pan and cook for 30 sec
2. Add in green beans
3. Add in soy sauce, rice
vinegar, honey, water, and chili flakes
4. Cook until liquids are
cooked off, sort of

Hawaiian Turkey Burger
Ingredients:
-1 lb lean ground turkey
-2 scallions, thinly sliced
-1 clove garlic, minced
-1 tsp ginger (used ground bc didn't have time for fresh)
-1/4 cup panko bread crumbs (maybe use 1/2 cup)
-1 egg (maybe don't use next time)
-2 T soy sauce (next time use 1 T)
-2 T hoisin sauce
-pinch of salt
-1/2 tsp ground black pepper
-red pepper flakes'
-1 tsp sesame seeds (optional)
Toppings:
-pineapple - grilled the slices
-red onion, sliced
-green bell pepper, sliced
-avocado - didn't use this time bc didn't have time
Directions:
-Mix turkey in bowl and make patties
Note: Used 99% lean and always will I don't care. None of the recipes called for an egg, but I felt that that other burger recipes did, so I added it in anyways. The mixture was super sticky. Probably needed some more bread crumbs/panko.
I also used the cast iron griddle pan. Cleaning it is super painful. Not sure if it is worth it.
Steps to clean it.
-water and salt paste
-use brush
-can heat on stove to get bits off
-no soap
-completely dry

Sesame Encrusted Chicken Tenders
Ingredients:
-Chicken tenders (18 oz)
-2 tsp sesame oil
-2 tsp low sodium soy sauce
-6 Tbsp toasted sesame seeds (used less maybe 5 Tbsp and pan-toasted them)
-1/4 cup of Panko (used more domed scoop)
-salt and pepper
-garlic powder + garlic flakes
-olive oil spray
Directions:
1. Preheat oven to 425 and spray baking sheet with olive oil spray.
2. Marinate tenders in sesame oil, soy sauce, +/- chili garlic, salt, pepper, garlic
3. Toast sesame seeds
4. Mix toasted sesame seeds, panko, salt, pepper, garlic powder, garlic flakes into flat bowl.
5. Place tenders into mix and coat well.
6. Place tenders onto baking sheet.
7. Lightly spray olive oil onto tenders.
8. Bake for 8-10 min. Then turn over and cook for another 4-5 min.

Skinny Pineapple Chicken with Cashews
Felt like making Asian last night. I doubled the sauce because I added veggies (bell pepper trio) and onions.
Ingredients:
-chicken breast, 1.5 lbs cubed
-salt and pepper to taste
-Your choice veggies: bell pepper trio, red onions
-1 cup fresh diced pineapple (reserve juices if any to add to sauce below)
-1/2 cup of cashews
Sauce:
-2 (4) garlic cloves
-1 (2) Tbsp ginger
-2 (4) Tbsp rice wine vinegar - tasted too vinegary! use less next time
-2 (4) Tbsp soy sauce
-2 (4) tsp Sriracha sauce - used maybe a little more, had some kick
-1/2 (1) tsp toasted sesame oil
-Sprinkled red pepper flakes for more spice
-leftover pineapple juice if any
-2 tsp corn starch + 1/4 cup of water
Directions:
1. Combine ingredients to make sauce + cornstarch/water - set aside
2. Cook chicken with salt, pepper, garlic powder - set aside
3. Cook veggies a little bit
4. Add sauce and stir
5. Add cornstarch/water mix - whisk with fork before adding
6. Stir until thickened
7. Add cashews and diced pineapple
Notes:
Served with rice.
As mentioned above, too vinegary, would add less than 4 Tbsp of rice wine vinegar. Pineapple is already kind of acidic.

Kung Pao Chicken
Ingredients:
-1-1.5 lbs chicken breast, cut into pieces
-1 red bell pepper, cut into squares
-1 (green/orange/yellow) bell pepper, cut into squares
-1 yellow onion, cut into squares
-4 cloves of garlic, cuisinarted
-1 inch piece of ginger, cuisinarted
-1/2 cup of peanuts - bake in oven and add last! (let Eric bake)
-Heavy sprinkle of red pepper flakes
-green onions
SAUCE (4 servings):
-1 Tbsp honey --> 1.5 Tbsp
-3 Tbsp soy sauce --> 6 Tbsp
-2 Tbsp rice wine vinegar --> 3 Tbsp
-1 tsp sesame oil --> 2 tsp
-1/2 tsp ground ginger --> LIBERAL SPRINKLE
-1/8 tsp white pepper --> ERIC HATED LIBERAL SPRINKLES SO JUST DO 1/8 ts
-1/4 cup of water
-1 Tbsp cornstarch - added last and stirred right before adding to avoid clumps --> 2 Tbsp
Directions:
1. Make the sauce by combining all ingredients.
2. Use cuisinart to chop garlic and ginger together
3. Cook chicken with olive oil and half the garlic/ginger.
4. Saute the bell peppers, onions, rest of garlic/ginger, red pepper flakes.
5. Add the sauce and stir until thickened.
6. Bake (let Eric "dress) peanuts in oven and add last
Notes:
-Served with rice, but next time could use zoodles. Think I did this before with Skinnytaste recipe.

Skinny Orange Chicken
Ingredients:
-2 lbs chicken breasts, cut into bite-sized pieces
-salt and pepper
-Olive oil
-Toppings: green onions, toasted sesame seeds, orange zest
ORANGE CHICKEN SAUCE
-3 cloves garlic, minced (cuisinart-ed)
-1/2 tsp ground ginger (or use fresh)
-1/2 tsp white pepper
-1/3 cup of honey (can cut back)
-1/2 cup of orange juice
-1/3 cup soy sauce
-1/4 cup rice wine vinegar
-2 Tbsp cornstarch - add last minute to make sure no clumps when mixing
-zest of one orange (*KEY*)
-pinch of red pepper flakes (or more)
Directions
1. Make orange sauce by combining all ingredients. Use medium bowl.
2. Season chicken with salt and pepper. Cook with olive oil in pan, until nearly cooked through
3. Pour in orange chicken sauce and stir. Let the sauce come to a boil and stir constantly until thickened.
4. Add green onions, toasted sesame seeds, and orange zest (if still have some)
Notes:
-Added less honey and cornstarch than original recipe called for. Could do even less honey actually.

Cauliflower Fried Rice - Meal Prep
Ingredients:
-1 lb cubed chicken or 1 bag of shrimp
-1 yellow onion, diced
-2-4 cloves of garlic, minced, or about 1 tsp garlic powder
-1 package cauliflower rice
-Frozen peas - estimate 1/2 cup
-Frozen edamame - estimate 1/2 cup
-Frozen peas/carrots/corn combo - just a sprinkle to get some color
-3 scrambled eggs
-3 T soy sauce
-1 T oyster sauce
-1 T chili garlic sauce
-1 tsp sesame oil
Directions:
1. Scramble eggs and set aside
2. Cook chicken or shrimp and set aside
3. Sauté onions and garlic (powder)
4. Add cauliflower rice, frozen peas, frozen edamame, frozen peas/carrot/corn combo
5. Add soy sauce, oyster sauce, sesame oil
6. Stir until everything is warm
7. Add in eggs and chicken or shrimp
